Black Bean Ravioli with Chipotle Cream Sauce

  • Filling
  • 2-3 dried pasilla or chipotle chilies
  • 2 cloves garlic, peeled
  • ¼ cup chopped yellow onion
  • 2 cups canned black beans, drained and rinsed
  • ¼ cup chopped fresh coriander (cilantro)
  1. Filling
  2. Place the chilies in a small bowl and cover with boiling water.
  3. Soak until very soft, 15-20 minutes.
  4. Drain and remove stems.
  5. Place the chilies, garlic, onion, beans and cilantro in a food processor.
  6. Process until smooth.
  7. Make and form the ravioli as directed above.
