Chicken Alfredo Pizza, II

- Alfredo sauce:
- 5½ ounces unsalted butter
- ¼ cup flour
- 2 cups heavy cream
- 3½ ounces Parmesan, grated
- 2¼ ounces Romano, grated
- 8 ounces Ricotta cheese
- 2 teaspoons granulated garlic
- salt and pepper, to taste
- Melt butter in stockpot over medium heat.
- Add flour and cook five minutes, stirring occasionally.
- Slowly whisk in heavy cream, stirring constantly until thoroughly incorporated and smooth.
- Add Parmesan, Romano, ricotta and garlic, stirring to melt and fully incorporate each ingredient before adding the next.
- Bring to simmer and cook 10 minutes, stirring frequently.
- Season to taste with salt and pepper.
- Before using, allow sauce to cool slightly and thicken.
