Chicken Alfredo Pizza, II

Ingredients
  • Alfredo sauce:
  • 5½ ounces unsalted butter
  • ¼ cup flour
  • 2 cups heavy cream
  • 3½ ounces Parmesan, grated
  • 2¼ ounces Romano, grated
  • 8 ounces Ricotta cheese
  • 2 teaspoons granulated garlic
  • salt and pepper, to taste
Instructions
  1. Melt butter in stockpot over medium heat.
  2. Add flour and cook five minutes, stirring occasionally.
  3. Slowly whisk in heavy cream, stirring constantly until thoroughly incorporated and smooth.
  4. Add Parmesan, Romano, ricotta and garlic, stirring to melt and fully incorporate each ingredient before adding the next.
  5. Bring to simmer and cook 10 minutes, stirring frequently.
  6. Season to taste with salt and pepper.
  7. Before using, allow sauce to cool slightly and thicken.
