Chile Con Queso Pizza

Serves: approximately 1 quart
  • *Salsa Fresca:
  • 2 pounds ripe seeded and dices plum tomatoes
  • 4 large fresh-stemmed jalapeno peppers
  • ½ cup finely chopped red onion
  • ½ cup tomato juice
  • ¼ cup of fresh lime juices
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ cup finely chopped cilantro
  1. In a food processor or blender, combine half the tomatoes, jalapenos and onions with the tomato juice, lime juice, cumin , and salt.
  2. Blend well
  3. Stir in the remaining tomatoes, peppers, onion, and cilantro.
  4. Let stand at room temperature for about 45 minutes before using.
