Grilled Calamari

       - Cut deep slits (not all the way through) into the body sac.
  - This technique prevents squid from curling up on the hot grill.
  - Grill for about 1 minute, turning once. When the squid are cooked, the slits open and resemble a rooster's crest.
  - After grilling, simply brush the squid with olive oil and serve with wedges of fresh lemon.
  - Garnish the plate with some simple greens.
