Low-Cal Herb Dressing

Ingredients
  • 1 ½ cup tomato juice
  • ½ cup of red wine vinegar
  • 2 teaspoons minced parsley
  • 2 tablespoons chopped scallions
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • ½ teaspoon sugar
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper
Instructions
  1. Combine all ingredients in a non-reactive container and shake to mix thoroughly.
  2. Let sit 1 hour and then remove the garlic cloves.
