Midwestern-Style Sausage

- 2 tablespoons ground sage
- ¾ cup chopped parsley
- 1 tablespoon thyme
- 1 tablespoon oregano
- 1 tablespoon ground black pepper
- 1 tablespoon ground ginger
- 1 tablespoon allspice
- 1 cup finely chopped onion
- 1 cup peeled, seeded and diced apple
- Note: For this recipe use 1 ½ cups of a fruity white wine like chenin blanc or Chablis, or even a blush wine, or use ¾ cup of a spirit like apple jack, bourbon or whiskey and ¾ cup of water
- Follow instructions for “Chicken/Turkey Sausage Master Base”
- Measure out the above combinations before adding them into the base.
- Mix well.
- Make a small taster patty, cook and taste.
- Adjust the seasonings if necessary.
