Panna Cotta with Strawberries

Ingredients
  • Panna cotta
  • 2 tablespoons water
  • 1¼ teaspoons unflavored gelatin
  • 2 cups whipping cream
  • 1¼ cups plain whole-milk yogurt
  • 1 teaspoon vanilla extract
  • ½ cup sugar
Instructions
  1. Pour 2 tablespoons water into small bowl.
  2. Sprinkle gelatin over water.
  3. Let stand until softened, about 15 minutes.
  4. Whisk 1 cup cream, yogurt, and vanilla in large bowl to blend.
  5. Heat remaining 1 cup cream and ½ cup sugar in small saucepan over medium heat, stirring until sugar dissolves and cream comes to simmer.
  6. Remove from heat.
  7. Add the gelatin mixture, stirring to dissolve gelatin.
  8. Mix hot cream-gelatin mixture into yogurt mixture in bowl.
  9. Lightly oil six ¾-cup ramekins (use canola oil).
  10. Divide mixture among the six ramekins, using about ½ cup for each.
  11. Refrigerate desserts uncovered until cold, then cover and refrigerate overnight.
  12. To serve: Run small knife around each panna cotta.
  13. Place bottoms of ramekins, one at a time, in bowl of hot water 45 seconds.
  14. Place plate atop ramekin.
  15. Hold plate and ramekin together; invert, shaking gently, to turn out panna cotta.
  16. Serve with sauce
  17. For strawberries: Toss strawberries with the sugar.
  18. Let stand 30 minutes, tossing occasionally. Spoon strawberries over panna cotta and serve. You can also make a strawberry coulis (recipe below), or strawberry sauce to drizzle on the plate and over the panna cotta.
