Pizza alla Pesto

Ingredients
  • PESTO SAUCE
  • 2 cups loosely packed fresh basil leaves
  • 2 cloves garlic, peeled
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons grated Romano cheese
  • ¼ cup pine nuts
  • ½ cup extra-virgin olive oil
  • Salt and freshly ground pepper to taste
Instructions
  1. Place the basil (reserve about 8 leaves for garnish), garlic, cheeses an pine nuts in a food processor.
  2. Pulse the machine 10-12 times or until the ingredients are combined thoroughly.
  3. With the motor running slowly add the olive oil.
  4. Process until smooth.
  5. Season with salt and pepper.
  6. Should you wish to thin the sauce a bit, add hot water to bring it to a creamy consistency.
  7. The sauce can be made ahead and kept in the cooler, well covered, for several days.
