Pizza Insalata Al Gameroni (Shrimp with Pancetta, Mozzarella, Fresh Tomatoes and Arugula, Red Pep

- 1 ready to use pizza dough
- ½ teaspoon chopped garlic
- 8 ounces mozzarella
- 1 cup seeded and roughly chopped fresh tomatoes
- 4 (16-20) split shrimp
- 1 ounces rendered pancetta or bacon cubes
- Garnish: 1 handful of arugula and a few thin rings of red pepper tossed with some balsamic dressing*
- Spread the garlic evenly over the dough and layer the mozzarella over the garlic.
- Dot with tomatoes, shrimp and pancetta and bake until golden.
- Toss the arugula, red pepper slices and balsamic dressing in a small bowl.
- When the pie is done, slice it into the desired number of slices and mound the salad in the center.
