Thai Peanut Pizza Sauce

Ingredients
  • ½ cup cream of coconut
  • 3 tablespoons rice wine vinegar, seasoned
  • 2 tablespoons lemon juice
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh cilantro, mined.
  • 1 teaspoon granulated garlic
  • 2 tablespoons pickled ginger, minced
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon light corn syrup
  • 1 cup peanut butter
  • 1 tablespoon vegetable oil
Instructions
  1. Blend in food processor the first 9 ingredients.
  2. Blend for 30 to 45 seconds.
  3. Slowly add vegetable oil to mixture while continuing to blend
  4. Add peanut butter and pulse 5 to 6 times to incorporate.
  5. Place in clean container and hold under refrigeration until needed.
