The Founders Pie
Recipe type: pizza
  • 20 ounces pizza dough
  • 6 ounces pizza sauce*
  • 1 ounce extra-virgin olive oil
  • ½ ounce Pecorino Romano
  • 8 ounces whole-milk mozzarella
  • 5 ounces sweet Italian sausage, cooked
  • 2 ounces pepperoni
  • 6 ounces ricotta
  1. Sprinkle cornmeal on a 16-inch pizza peel.
  2. Stretch dough to a size ½ inch smaller than the peel and squirt olive oil over the dough.
  3. Ladle pizza sauce over the oil and sprinkle Pecorino Romano on the sauce.
  4. Follow with the mozzarella.
  5. Next place the pepperoni on the pizza; break the cooked sausage into pieces and place on the pizza.
  6. Distribute small pieces and place of ricotta evenly over the pizza.
  7. Bake in a wood-fired oven directly on the brick surface for approximately 5 minutes rotating periodically until golden brown.
