Horseradish Cream Sauce

- ¼ cup butter
- ½ cup flour
- 2 cups heavy cream
- 2 teaspoons Dijon mustard
- 1 teaspoon chopped garlic
- 2 cups prepared horseradish
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Melt butter in a saucepan on medium heat.
- Mix flour with butter to make a roux. Cook for a couple minutes, stirring frequently. Do not brown the flour.
- Add cream and continue to stir.
- Turn heat down to low and add garlic, horseradish, mustard, salt and pepper.
- Continue to simmer and stir frequently until it becomes a thick consistency similar to an Alfredo sauce.
