Beef “Flankenstein” Marinade

Ingredients
  • 1 cup red wine
  • 1.5 cups red wine vinegar
  • 2 cups water
  • 2 bay leaves
  • 5 juniper berries
  • ½ teaspoon ground allspice
  • 1 teaspoon black peppercorns
  • 1garlic clove minced
Instructions
  1. Bring all the ingredients to a boil over high heat.
  2. Turn heat off and pour the marinade over Large cut of flank steak trimmed of silverskin, (3 pounds) placed in a lexan or non-reactive container.
  3. Cover when cool and place in your walk-in for two days, turning frequently.
