Puerto Rican Sofrito

Ingredients
  • 2 tablespoons Annatto oil (if available; if not, use extra virgin olive oil)
  • 2 green bell peppers, chopped fine
  • 3 Roma tomatoes, chopped fine
  • 1 onion, chopped fine
  • 3 garlic cloves, chopped fine
  • 2 teaspoons dried oregano
  • 1 cup rough chopped cilantro
  • 1 cup parsley
  • 1 teaspoon cumin powder
  • 1 tablespoon green olives, chopped fine
  • 1 tablespoon white vinegar
  • Salt and pepper to taste
Instructions
  1. Heat the oil up in a high heat sauté pan and add the garlic and onion.
  2. Sauté for 5 minutes then add the rest of the ingredients.
  3. Turn heat to medium and cook for 30 minutes.
  4. Turn the heat off and let sit, still stirring.
  5. After cooling, hold in refrigerator for flavors to meld.
