Pecorino Coins for Calabrian Salami and Double Pecorino Pizza

Ingredients
  • ½ tablespoon grated Pecorino for each coin
Instructions
  1. Prepare a large sheet pan with parchment paper.
  2. Dollop a ½ tablespoon grated Pecorino into a pile on the parchment and gently push out into a quarter-sized coin shape.
  3. Continue until you have 12 coin-shaped mounds.
  4. Place the sheet pan into a 475-500 F oven until the cheese has melted and the edges are just getting brown. Be careful as Pecorino has less fat than Parmigiano or Asiago so they will take less time to crisp up.
  5. Pull the sheet pan out and let cool. Reserve for topping.
