Ingredients
  • 2½ pounds ground lamb
  • ½ pound ground pork fat
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon black pepper
  • 2 teaspoons salt, more as needed
  • ½ teaspoon cayenne
  • 4 tablespoons smoked paprika
  • 1 tablespoon minced garlic
Instructions
  1. Mix all ingredients in a bowl until combined.
  2. Fry a small piece and taste.
  3. Adjust salt as needed.
