Slice Street Pizza, Dripping Springs, TX
“We just love making pizza, especially for people who LOVE pizza as much as we do,” says owner Darius Aram. “Our 48-hour cold ferment dough utilizes a flour blend that is 100% non GMO using local flour to boot, as we’re very proud of our relationship with Barton Springs Mill who mills the flour within a day of sending it to our shop. We use 100% olive oil, real butter in our Detroit pizzas, and make our own Ranch, Greek and Caesar dressings without MSG. We do our best to avoid seed oils and create a pizza that has the right amount of chew and crunch, which is why we say, ‘Trust the Crust!’ …We try to put our own spin on things. NY round pies and deep crust, thick and airy Detroit Pies, with that lovely frico cheese edge! When we started the pizzeria, we talked about the certain non-negotiables…no pineapple, no anchovies, no ranch, etc… Now, our mentality has shifted. Basically, we threw the rule book out. We make pizza that sounds awesome, fun, sometimes insane, other times just the classics. The only rule is, let’s make great pizza! We put blueberries on a pizza and called it the Big Blue Hatch. It wasn’t planned this way, but it became an alliteration pie, with nearly all ingredients starting with the letter ‘B.’ A white pie with Blueberries, Blue Cheese, Brie, Biltong (South African dried jerky-like beef), Basil and hot Hatch chilies. The exploding blueberries that painted a purple hue across the white pie, contrasted the funk of the blue cheese, which balanced out the heat of the Hatch chilies. The texture played games with your palate too, being that the crunch of the crust, met the creaminess of the sauce and Brie, against the chew of the Biltong.”
Square Peg Pizzeria, Glastonbury, Connecticut
The six-unit Connecticut pizza company is growing with its first out-of-state location opening in Delray Beach, Florida. Square Peg also operates a mobile pizza trailer. According to its website, it features “delicious wood-fired pizzas, our Amer~Italian menu is filled with favorites that are prepared with a Peg twist.” Menus differ with some locations serving up pastas and a full-service brunch featuring The EGGcelent pizza and Spaghetti Pancakes. The pizza menu offers several specialty pizzas. The Chicken Bacon Cacciatore is topped with braised then shredded chicken, cured bacon, basil and a Parmesan cream drizzle. The Red, White and Green features burrata, arugula, cherry tomatoes, EVOO and shaved Parmesan. Square Peg has several desserts including a Gelato Sandwich, vanilla gelato sandwiched between two chocolate chip cookies and topped with a chocolate ganache drizzle.
Lucino’s Pizza, Las Vegas, Nevada
Congrats to Lucino’s on reopening in a new location. Its fans have been patiently awaiting its return after a fire forced their original location to close. The new space is twice the size and doubled the number of ovens. Lucino’s offers 15 specialty pies on its pizza menu. The Bryce Harper Pizza features garlic and herb oil, chopped broccoli, shredded chicken, ricotta cheese, Pecorino Romano cheese and finished with freshly chopped basil. There is also The Brotherly Stone Pizza that has no sauce, is topped with mozzarella cheese and finished with thin-sliced imported mortadella, pistachio, honey drizzle and slice basil. The menu also features six topped fries. The Cultural Fries features crispy crinkle cut fries tossed in spicy garlic aioli, topped with chopped Caribbean jerk grilled chicken, fried onions, melted mozzarella, bacon and jalapenos.
