Candied Bacon and Peppered Squash

Ingredients
- 2 dough balls, 450 grams each
- 300 grams mozzarella
- 10 slices bacon (about 300 grams)
- 150 grams brown sugar
- 7 grams black pepper, divided
- 1.5 grams cayenne pepper
- 160 grams Delicata squash, thinly sliced with seeds removed
- Olive oil
- 30 grams fresh Serrano chiles, thinly sliced (can substitute different chiles like jalapeño)
- 80 grams Manchego, shaved
Instructions
- For Candied Bacon: Pre-heat oven to 350 F and line a sheet pan with parchment paper.
- Mix brown sugar, 6 grams of black pepper and cayenne in a bowl.
- Coat each slice of bacon in sugar mixture, then place on parchment paper. Bake until bacon is rendered and starting to crisp, about 25 minutes. (Bacon can be prepared ahead of time.)
- For Pizza: In a separate bowl, toss the Delicata squash with olive oil, a pinch of salt and remaining
- gram of black pepper.
- Stretch dough balls to 16 inches. Top each with 150 grams of mozzarella. Evenly distribute half of the Delicata squash on each pizza, followed by the bacon and chiles. Bake at 625 F for 8 minutes (or whatever temp/time your dough requires).
- Take pizza out of the oven, cut it into six slices and top with shaved Manchego.
