Parsley Sauce

Ingredients
  • 1 cup chopped flat-leaf parsley
  • 2 peeled garlic cloves
  • ¼ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons grated parmesan cheese
Instructions
  1. Combine all ingredients in a food processor or blender.
  2. Process until a smooth, thick paste is formed
  3. Place about 1 tablespoon of the parsley sauce in the center of a bowl of tomato soup.
