San Giovanni's Pizza

Ingredients
  • 14-inch pizza shell
  • 3 tablespoons olive oil
  • ½ cup finely chopped yellow or Spanish onion
  • 1 cup peeled, seeded and chopped ripe Roma tomatoes, or canned plum tomatoes, squeezed dry & chopped
  • ¾ cup dry breadcrumbs
  • ¾ cup diced caciocavallo
  • Olive oil
Instructions
  1. Sheet the dough and put on a screen or pan.
  2. Brush the dough lightly with olive oil.
  3. Pinch the edges of the dough to form a raised edge.
  4. Set aside.
  5. Heat the oil in a skillet over medium heat.
  6. Add the onion.
  7. Saute the onion until it becomes translucent.
  8. Add the tomatoes.
  9. Cook for about 7 minutes.
  10. Salt and pepper to taste.
  11. Can be prepped up to this point and held.
  12. Spread half of the breadcrumbs over the pizza crust.
  13. Spread tomato sauce over the breadcrumbs.
  14. Sprinkle on the remaining breadcrumbs.
  15. Sprinkle the cheese evenly over the pizza.
  16. Drizzle some olive oil over the cheese.
  17. Bake.
