Marinated Summer Tomato Sauce

Ingredients
- ½ cup extra-virgin olive oil
- 4 cups tomato, chopped (try using 2-3 different colors and kinds of tomatoes in this sauce)
- 1 cup smoked mozzarella, shredded; or goat cheese crumbled
- 1 tablespoon fresh garlic, finely chopped
- Small handful of fresh basil leaves, torn
- ¼ cup Parmigiano, grated
- Salt and fresh ground pepper
Instructions
- Toss all of the above in a large bowl (preferably the one in which you would serve pasta) and let marinate 30-60 minutes at room temperature before tossing with hot pasta.
