Meat Sauce from Sicily

Ingredients
- ½ cup extra-virgin olive oil
- ½ cup chopped onion
- 2 pounds lean ground beef
- 1 cup dry white wine
- ¼ cup red wine vinegar
- 1 teaspoon lemon zest
- 1 teaspoon lime zest
- 3 cups canned plum tomatoes, juices drained, tomatoes crushed by hand and drained again
- Salt and pepper, to taste
Instructions
- In a large sauté pan, add the olive oil and the onion.
- Sauté until the onions soften.
- Add the ground beef and cook and stir until the meat loses any pink color.
- Turn the heat to high.
- Add the wine.
- Cook off the wine.
- Add the red wine vinegar.
- Cook on high heat for three minutes more.
- Stir in the lemon zest and the lime zest.
- Add the tomatoes.
- Cook the sauce for 45 minutes to 1 hour, until it thickens slightly.
- Add salt and pepper.
