I enjoyed beets for the first time in my entire life recently when Denise Greer lightly oiled, salted and roasted them before putting them on a pizza. I grew up watching my grandparents put these disgustingly gelatinous, weirdly colored things in salads and telling me how healthy they were. Whatevs … not putting THAT in my mouth.
But this pizza was divine. It popped. And it turns out grandma was right.
I guess now that I’m on the beets bandwagon I should at least encourage you to read the article and check out the recipes.
I wonder if any of the competitors at this year’s International Pizza Challenge will find an interesting way to drop some sick beets? I’m always blown away by the creativity in Vegas. It’ll be interesting to see what items push the envelope at Pizza Expo now that we’re in the new and improved Roaring 20s.
Speaking of Pizza Expo: have you registered to attend yet? The show is next month and there are some major events and speakers planned. In fact, there are more than 70 seminars, workshops and demonstrations. I’ll be leading a panel discussion on moving from a mobile pizza unit to a brick-and-mortar establishment. If you want to see the World’s Okayest Panel Moderator in action you now know where to find me.
Check out the Pizza Expo preview article for a small glimpse of what’s in store for this year’s attendees. There’s a lot going on. After all, it is the world’s largest pizza show!
All the Best,
