I enjoyed beets for the first time in my entire life recently when Denise Greer lightly oiled, salted and roasted them before putting them on a pizza. I grew up watching my grandparents put these disgustingly gelatinous, weirdly colored things in salads and telling me how healthy they were. Whatevs … not putting THAT in my mouth.
But this pizza was divine. It popped. And it turns out grandma was right.
Who knew?
I guess now that I’m on the beets bandwagon I should at least encourage you to read the article and check out the recipes.
I wonder if any of the competitors at this year’s International Pizza Challenge will find an interesting way to drop some sick beets? I’m always blown away by the creativity in Vegas. It’ll be interesting to see what items push the envelope at Pizza Expo now that we’re in the new and improved Roaring 20s.
