Concept:
The Missing Brick is a dope pizza joint, infusing hip hop music, inspiring art and dope pizza under one roof. Our goal was to create a space where urban professionals can hang out, share pizza, have a beer/ wine and network while enjoying all that we offer in an adult setting.
Pizza Style:
I created my own style that I like to call Indy style. We created our pizzas to reference our urban culture. All of our pizzas reflect dishes such as barbecue rib tips and seafood boils that you can relate to. Our dough is a cross between hand tossed and a flatbread. It’s also shaped rectangular like a brick. My goal was to develop a crust dense enough to hold our drizzled and heavy toppings.
You’re the first 21+ pizza joint in Indy. Why have you chosen that niche market?
Yes, we are Indy’s first 21+ pizza joint. I chose an adult only concept because of the environment we created. We play trap music and our menu concept may be too vulgar for minors. However, all ages are welcome to dine outside during patio season.
Tell us more about your focus on collaboration with other local businesses?
Our mission is to build the community back brick by brick, starting with collaborations with local restaurants. Hopefully through these partnerships with Chef Oya’s The Trap Seafood and Hanks Smoked Brisket, we show our community the value in not competing. That there’s enough success for everyone. At the same time, recycling our money back into our community, so that we all can thrive.
What’s a top priority on your mind as we enter 2021 and how will you address it?
My top priority going into 2021 is to use my social media platforms to help bring more awareness to HBCUs (historically black colleges and universities) in the Midwest. I plan to bridge that gap by finishing TMB food truck by spring 2021 and getting it on the road. Earlier this year, I was made aware of Central State, a HBCU, which is two hours away from Indianapolis. I believe if more students knew that they can go to a HBCU and come home on the weekends, they would go off to college.
