Hengam and Matthew Stanfield opened Mattenga’s Pizzeria more than a decade ago, growing the pizza powerhouse to seven locations around San Antonio, Texas. Mattenga’s pizza has been voted “Best of San Antonio” for three straight years. Paired with the couple’s meticulous engineering approach to operations, Mattenga’s earned Pizza Today’s Pizzeria of the Year in 2025.
Hengam could teach a master class on building the machine to run pizzeria operations. That focus has earned her the Operational Oracle designation.
Hengam says game changers have been the Ops Book, a master operating system for day-to-day operations, and the Weekly Engineering Dashboard, where key operating numbers are evaluated. The dashboard includes sales, labor (budgets vs. actual), purchases (budgets vs. actual), usage, reviews, load times, training assessments and compliance site audit scores.
“The Dashboard shifted everything for me as a leader,” she says. “Instead of being in the weeds micromanaging tasks, I became a leader who holds the team accountable to outcomes and coaches them.”
Stanfield studies Mattenga’s as a problem-solver, getting crystal clear on the vision for every aspect of the business.
As a mother of four with seven restaurants, time management is vital. She incorporates a number of operational tools but adds, “Success in this business is … about how you strategically leverage those tools to hit your outcomes.”
