Carbonara Pizza

Ingredients
- One 10-inch ready to use pizza
- ½ teaspoon chopped garlic
- 3 ounces mozzarella
- ½ sautéed, chopped onions
- 2 ounces par cooked bacon or pancetta cubes
- 4-6 ounces Carbonera custard base*
- 1 tablespoon grated Parmigiano
- 1 tablespoon finely chopped parsley
Instructions
- Build a pizza with garlic, mozzarella, onions, and bacon
- Bake the pizza until the crust is set and hard enough to move. (place this pie near the oven door for easy access).
- Carefully add the Carbonara custard base to the pizza and continue baking until the custard is golden and puffed and the crust is nicely browned.
- Dust the pizza with Parmigiano and parley before serving. Try to slice this one at the table, since slicing deflates the pie.

Ingredients
- *Carbonara Custard Base
- 16 beaten eggs
- 1 gallon heavy cream
- 4 cups grated Parmigiano
- 1 teaspoon grated nutmeg
Instructions
- Combine all of the above and blend well.
- Use 6-8 ounces per serving or to personal taste.
