Chile Con Queso Pizza

Ingredients
- 1 ready to use pizza shell
- ½ teaspoon chopped garlic
- 8 ounces shredded mozzarella
- 4 ounces shredded cheddar cheese
- 2 ounces goat cheese
- ¼ cup thinly sliced jalapenos (or canned, drained)
- a few drops of olive oil
- a pinch of oregano (preferable Mexican)
- Garnish after baking:
- A small handful of shredded lettuce
- ½ cup salsa fresca*

- Make up the pizza layering the ingredients above.

Serves: approximately 1 quart
Ingredients
- *Salsa Fresca:
- 2 pounds ripe seeded and dices plum tomatoes
- 4 large fresh-stemmed jalapeno peppers
- ½ cup finely chopped red onion
- ½ cup tomato juice
- ¼ cup of fresh lime juices
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ½ cup finely chopped cilantro
Instructions
- In a food processor or blender, combine half the tomatoes, jalapenos and onions with the tomato juice, lime juice, cumin , and salt.
- Blend well
- Stir in the remaining tomatoes, peppers, onion, and cilantro.
- Let stand at room temperature for about 45 minutes before using.
