- 1 ready to use pizza shell
- 8 ounces shredded mozzarella
- 4 ounces shredded Monterey Jack
- 8 ounces thinly sliced fresh ripe tomatoes
- 4 (16-20) shrimp, spit and tossed in a ΒΌ cup Chile rub*
- 2 tablespoons thinly sliced green scallion tops
- Garnish after baking:
- 1 teaspoon Texan gremolata**

- *Chile Rub:
- Yield: ΒΎ cup (enough for 12 large split shrimp)
- 2 teaspoons finely chopped garlic
- 1 tablespoon pure ground chile powder (more or less depending on taste)
- 1 juices lime
- Β½ cup olive oil
- 1 tablespoon finely chopped cilantro
- Salt and pepper to taste
Instructions
- Method: combine all of the above in a small mixing bowl until well blended.
- Toss the shrimp to order using ΒΌ cup per order.
