Pizza Tricolor (Shrimp with Triple Herb Pesto, Fresh Tomatoes and Goat Cheese)

Ingredients
- 1 ready to use pizza dough
- 8 ounces mozzarella
- 1 cup seeded and roughly chopped fresh tomatoes
- 4 (16-20) split shrimp
- 2 tablespoons triple herb pesto*
- 1 ounce crumbled goat cheese
Instructions
- Spread the mozzarella cheese evenly over the dough and dot with fresh tomatoes
- Toss the shrimp pieces in a small bowl with the pesto until well coated and arrange them evenly over the pie.
- Crumble the goat cheese over all.
- Bake until golden.
- Garnish with whole basil leaves, parsley leaves or chives.

- *Triple Herb Pesto
- 1 cup packed basil leaves
- ½ cup packed Italian parsley leaves
- ½ cup finely chopped chives or scallions
- 2 teaspoons chopped garlic
- 1 cup olive oil
- ¼ cup grated parmesan cheese
- Pepper to taste
Instructions
- Puree the basil, parsley and chives in a food processor or blender until smooth.
- Add the garlic, olive oil, parmesan and pepper and blend until well mixed
