Ingredients
- 1 cup kale, torn
- 1 cup spring mix
- ¼ cup quinoa
- 3 tablespoons goat cheese
- ¼ Granny Smith apple, sliced thin
- 1 tablespoon pumpkin seeds
- ¼ cup pickled beets
- ¼ avocado, sliced thin
- ¼ cup warm citrus bacon vinaigrette (recipe to follow)
Instructions
- Mix the kale and spring mix and place on a large plate or in a bowl.
- Top with quinoa in center of greens.
- Add beets.
- Top with goat cheese.
- Arrange sliced apples and avocado around plate or bowl.
- Sprinkle in pumpkin seeds.
- Serve with vinaigrette on the side.
Warm Citrus Bacon Vinaigrette

Ingredients
- 6 slices of thick-cut bacon, diced and cooked until done, but soft
- 1 medium shallot, minced
- ½ cup red wine vinegar
- 1½ teaspoons packed light brown sugar
- ¾ teaspoon Dijon mustard
- juice from 1 large orange
- juice from 1 lemon
- ½ tablespoon lime juice
Instructions
- Juice the lemon, lime and orange into a saucepan.
- Whisk in together with red wine vinegar and Dijon mustard.
- Over medium-low heat, add brown sugar and shallots.
- Add in bacon.
- Cook until the flavors melt and the bacon is fully rendered.
