Eric Redfield, co-owner of Pizza Today’s 2024 Pizzeria of the Year Camporosso Wood Fired Pizzeria in Ft. Mitchell, Kentucky, tapped to deliver Day 2 Keynote Address at International Pizza Expo
Eric Redfield and his wife Amy are co-owners of Pizza Today’s 2024 Pizzeria of the Year Camporosso Wood Fired Pizzeria, which is located in Ft. Mitchell, Kentucky. They started their restaurant with a single principle: To not only look out for your needs, but also the needs of others. Since then, the Redfield’s have always used a portion of their profits to give back to their community and leave a lasting impact. In fact, it’s become more than a passion – it’s a mandate!
Back in 2014 when Pizza Today published an article on Camporosso Pizzeria their annual sales were humming along to the tune of $1.4 million. Fast forward to today, and that’s nearly doubled. That’s an impressive feat for any pizzeria, which is largely due to how invested they are to Ft. Mitchell and their team of long-term employees. Their number one credo has always been and always will be employee satisfaction. They knew from the beginning that they wanted to achieve this goal through generosity. To that end they’ve always offered their employees group health and dental insurance, along with a matching 401-K plan up to six percent. A testament to how well this has worked is the fact that they started out with 15 employees and six of them are still there eight years later. I can’t think of another restaurant that has a 10-percent turnover rate since inception. Better yet, in the future they intend on giving back to their community in a BIG way, so stay tuned.
Camporosso has always focused on providing a stellar dine-in experience to their patrons, but during COVID their to-go orders increased dramatically and have become a permanent fixture of their pizzeria that has significantly boosted their bottom line. However, they personally don’t think Neapolitan pizza travels very well, but their community embraced it. In fact, this additional revenue stream helped catapult their business to a new level. Single store sales in 2023 were well over $3 million.
I like to think that attending Pizza Expo will be one of, if not the best, investments of time and money that you’ll make.
